Oh my treat! Vegan chocolate cake with avocado



In time of lockdown what best than treating yourself and your loved ones to some indulgent chocolate cake? The perfect comfort food in between conference calls to give you a boost, in front of your favorite series curled up in bed, or simply to celebrate someone's birthday virtually! Free from dairy, eggs, wheat and nuts, so you can share it with all cake lovers! 



Our recommendation: This cake is THE perfect occasion cake! This is our favourite moist fudgy chocolate layer cake! Serve it at your next dinner party, or with some candles on top it would make the perfect birthday cake! Make someone happy :)

Preparation: 30 mins
Cooking: 25 mins 

What you need: 

For the cake (use dairy and gluten free ingredients)
375 grams flour
60 grams cocoa powder with minimum 60% cacao (use quality one) 
1 tsp soda bicarbonate
Tiny portion of sunflower spread for greasing
1 ripe avocado (about 150g)
320 grams sugar (muscavado preferably)
420ml soya milk (best unsweetened)
120ml oil
3 tsp vanilla extract
3 tsp baking powder


For the frosting (use dairy free ingredients)
100 grams ripe avocado flesh, mashed
100 grams sunflower spread
200 grams chocolate 70% cocoa, broken into chunks
35 grams cocoa powder
125ml soya milk
250 grams icing sugar 
2 tsp vanilla extract
Sprinkles (vegan)

Ten easy steps to your cake:

  1. Heat your oven to 160C/140C fan/gas 3. Grease two 20cm sandwich tins with a little dairy-free sunflower spread, then line the bases with baking paper.
  2. Blend the avocado and the sugar until smooth.
  3. Add the flour, cocoa powder, bicarbonate of soda, baking powder, milk, vegetable oil and vanilla extract to the bowl with ½ tsp fine salt and process again to a velvety, liquid batter.
  4. Divide between the tins and bake for 25 mins or until fully risen and a pick inserted into the middle of the cakes comes out clean.
  5. Let the tins cool for 5 mins, then flip the cakes onto a rack to cool completely.
  6. Now frosting time! Beat together the avocado flesh and the dairy-free sunflower spread until creamy and smooth. Pass the content through a sieve and leave on the side
  7. Melt the dairy-free chocolate, either over a bowl of water or in the microwave, then let it cool for a few mins.
  8. Heat the milk up until boiling point, and add the cocoa until smooth. 
  9. Add the avocado, icing sugar, melted chocolate and 1 tsp vanilla, and mix until you have a nice frosting. Add the frosting and to sandwich the cake and to top the cake.
  10. Feel free to add sprinkles, and after 15 mins, your cake is ready to be sliced!

  3. If there’s something I’ve been trying during this quarantine, it’s cooking, and baking.
    I’m no a big avocado eater though I like it, but my sister is, so I think I’ll get my hands dirty – kind of – and make this delicious looking treat.
    I really appreciate having recipes like these, especially well-written and explained !
